It is BBQ season! This spatchcock chicken, made by the American BBQ Company, is off the charts! Our household was regular buyers of the Citrus Peppercorn Spatchcock Chicken that Costco had a while back & now they’ve got this new brand/flavor in stock…….olive oil, herb & citrus. I was disappointed when I stopped seeing the Citrus Peppercorn in stock, but I gotta be honest……..I think I like this one better. It’s unbelievable tasty & is such a simple meal to cook. Throw it on the BBQ with some rice & grilled asparagus & you’ve got yourself a meal for 4 for around $20.
Here’s my surefire way to cook it perfectly every time. I get the BBQ pre-heated to about 400 degrees. I’ve got a 3 burner grill so I turn off the middle one & keep the 2 sides going. I throw the bird on & turn the temperature down to 325-350 with a digital leave in thermometer & cook it until it reaches an internal temperature of 160. It takes about 50-60 minutes depending on your BBQ. Please click below for the thermometer & the grill brush I use that I couldn’t live without. PLEASE check out the grill brush.
